Kohlrabi may very well be one of the most unknown and underrated vegetables. I can’t believe how many people do not grow kohlrabi at home, and even worse, the number of people who have never heard of kohlrabi.

WHAT IS KOHLRABI

Kohlrabi is a low growing cultivar that is part of the cabbage family. Kohlrabi can be eaten raw as a great part of a salad, or cooked. Many varieties exist, but the two that most home vegetable gardeners are familiar with are the white and purple vienna varieties.

KOHLRABI NUTRITION

Kohlrabi is a good source of various vitamins such as B6 or C and many minerals such calcium, potassium and iron.

GROWING KOHLRABI

Kohlrabi grows best in the spring and fall months when the temperatures are not as hot. I recommend that you direct sow the seeds, about a quarter inch deep, as soon as frost passes and you can work your soil. Your soil should be loose and enriched with plenty of compost. Plant one kohlrabi seed every eight inches for best results. Your kohlrabi can get very large if you have good quality soil.

HARVESTING YOUR KOHLRABI

The best time to harvest your kohlrabi is when the stems are about two and a half to four inches in diameter, when they are still fairly young. Both the stem, which looks like a bulb, and the leaves of your kohlrabi plant are edible.

Just remember that one seed produces one kohlrabi plant, so in order to keep your costs down you will want to grow this veggie directly from seeds. You can buy starts, but that will get pricey very quick.
